Paleo 7-Layer Dip

This easy recipe from Eat the Gains puts a healthy spin on a classic comfort food. It features lean protein (we used 93% lean ground beef), heart-healthy fats and plenty of crunchy, colorful veggies. It’s also gluten-free and comes together in less than half an hour for just 245 calories per serving.

- 1 1/2 pounds (675g) 93% lean ground beef
- 1 tablespoon taco seasoning
- Salt and pepper, to taste
- 2 cups (200g) riced cauliflower
- 1/4 cup (15g) cilantro, packed, roughly chopped, plus more for garnish
- 1 tablespoon lime juice
- 1 teaspoon avocado oil
- 1 cup (110g) onion, diced
- 2 cups (230g) bell peppers, diced
- 2 cups (100g) romaine, packed, chopped
- 2 Roma tomatoes, diced
- 1 large avocado, diced
- 1/4 cup (40g) pickled jalapeños
In a large saute pan set over medium heat, add ground beef and sauté for 7 minutes until browned, season with taco seasoning and salt and pepper halfway through. Transfer into an 8-by-8-inch dish.
Add cauliflower rice to pan and cook for 4–5 minutes until softened. Stir in cilantro and lime juice and distribute the mixture atop the beef, spreading evenly.
Add avocado oil to the pan and saute the onions for 3 minutes. Add bell peppers, salt and pepper, as needed, and saute for another 3–5 minutes, until softened. Layer on top of the cauliflower rice.
Cover peppers with a layer of romaine, then add tomatoes, avocado and pickled jalapeños. Garnish with fresh cilantro and enjoy.
